Chef Marco Ambrosino, from the southern island of Procida, has worked at Noma for a while during his brief (he is real young) career. He is mixing the two worlds and the outcome is a sustainable and seasonal uber creative menu. The place itself can accommodate only 28 people making it cosy and they will create a menu for vegan, vegetarians, no problem.
